First taste.

Thick, rich & meaty. Chocolate, coffee and toffee all in a liquid meal.

Maybe too much lactose - it seems a little bit sweet.

Next time - it will be no dex, all malt.

Gotta love this hobby. 3 cartons are being put away until at least xmas ans 2 for in a years time.

HEy All,

This has been bottled since the 20th of July. I've expecting an explosion but none so far. Fingers crossed.

I've even had one out in the sun, down the back of the yard, thinking that the higher temps during the day would bring on a bang.

How long is it until bottles usually explode????

Cheers - I think I'm going to refrain from trying to make Big Idiot beers and stick to all malt no dex and make beer around the 6%.

Cheers All - I'll let you know how the Bock bombs go. As for the stout - I think I'll rack, well at least half - I only have a spare 30L fermenter ATM and add a starter.

Like my recent Bock - this is a slow puppy.

However after the response from the Bock I'm looking for ideas.
The recipe is at the top of the thread.
Currently on 1070 - doesn't look like it's progressing.

Any suggestion???? Don't want any more bombs.

I was just thinking... and hoping...and checking my brew records.
i have had a brew finish at 1038 - they didn't explode within the time it took to drink, not long as it was a tasty drop...

maybe in a couple of days, open allow some co2 to escape and recap??? maybe I'm clutching at straws....

Okay,
So I'm getting scared. As soon as I finish here I'll go move them from the sleep out & stick them under the house in covered crates.

The recipe for the Bock was
1 x 3kg can ESB Bock
1 x 1.7kg can Black Rock Bock (got it when I couldn't get ESB)
1.25 Dex
200g Dark Malt Steeped
Total Liquid 20L ...

Highest FG

Hey All,

Whats the highest Final Gravity you guys have had.

Just finshed bottling a bock with a FG of 1050. I'm a bit wooried about bombs but I've tried shaking the fermenter and added another yeast.

It' been done 17 days. I pitched a second yeast at 7 days. Theres been no drop for 8 days ...

Hey All,

Thought I'd let you know how this puppy is progressing.
After an OG of 1152 we are down to 1075 after 8 days. So my software indicates something like 10.3%. The last couple of days it seems to have slowed to about 5 points a day. Smells awesome - even the missus likes it.

Don't know of any HBS in Gero but having lived further away from Perth than you (ie 700km) I've internet orders to be my friend. There is some WA based ones or awesome Eastern states one if you don't mind the postage.

All is well - two inch krausen - held at 20 degrees C. no activity in airlock - but neither has the Bock right next to it. The new house is pretty cold though.

I should know to 'just relax and have a homebrew'

Cheers for your advise - been to HBS to get some malt to make some starter next time ...

O the woes of the home brewer.
12 hours after pitching 2 WLP099 - Super High Gravity yeast - I've seen no sign of fermentation. I hope I haven't made my most expensive HB mistake so far.

Does the Liquid yeast take longer to start. This fermenter has been sitting at approx 23 degrees since I ...

Just put this down. I've got my fingers crossed. Final Volume 44L

500g Crystal
500g Choc malt
400g Dark Malk
200g Amber Malt
All Steeped 30 minutes

100g Fuggles - 90minutes
2kg DDME
1KG Dried Wheat MAlt Extract - it was in the cabinet
1kg Dark Brown Sugar
3.75kg Dextrose - had to make ...
