All wheat wit?

Hey all,

I've had success with an all wheat weizen (http://www.homebrewandbeer.com/forum/vi ... =13&t=8102) so now I'm thinking of an all wheat wit. I'm just not sure if wheat malt (I have Joe White stuff) would have the diastic power to convert it's own weight in unmalted wheat. Does anyone have ideas about this?

Wheat has equal diastatic power to barley, so my guess is you'd be OK to do this. You might end up with quite a high proportion of unfermentables in your beer, but it might be an interesting experiment.

I'd sure want to add enough rice hulls to make sure you could lauter such a mash, as I think it would be rather on the sticky side of things.

Lautering isn't so much of a problem because I'm using BIAB...

I did a decoction for the last all-wheat beer I did and it came out quite nice. I might do a small batch and see how it goes.
