Of course, before you open the beer, you have to chill it down:

you just need to chill the beer down without disturbing it... works best on filtered beer. then when you knock it, you create a disturbance, producing a "seed" crystal of ice, which is very quickly built on by the rest of the superchilled beer.
you can see it "spread" in the bottle.
