My partner is a coeliac, as are some of my mates....

What ingredients for various recipes are gluten-free?

I know that sometimes corn syrup or maize-based stuff actually has wheat in it (go figure!).

Is dextrose ok?

What else?

Dextrose should be ok.

Aside from that, maltodextrin maybe.

I think you'd struggle to make a good tasting gluten free extract beer.
For an all grain you cant go past Millet Man's post

I think Papazian has some recipes somewhere for dinkel, spalt etc beers. Just google it for your best chance.
