Hi, just did my first GB:

1 Coopers tin
500g LDM
600g dex
400g maltodextrin
125g grated ginger
1tsp Cinnamon
1 lemon juiced & zested

It's sitting in the primary - quick question about priming...same rate per litre as beer? Plan to bulk prime with about 180g dex (figure it should be reasonably fizzy.

Feedback appreciated!

180 is fine. Ginger beer should be nice and fizzy. 190 or 200 will work too , if youlike'emfizzy.

Thanks Chris!

This has a real kick to it!

I'm thinking of chilli-GB next time I can spare a fermenter for non-beer.

NICE!!!

Just take it REALLY easy on the chili. It is really easy to overdo.

If you do put too much in, drink it in 30 or 60mL glasses when friends come over. That works well.

Was thinking of boiling 4 or 5 medium size chillies then chucking the lot in the primary, but I have heard dozens of different methods and quanities, advice welcome!

In the boil is LETHAL!

I think you should think about steeping for 20mins in hot to boiling water, and then tasting as you add to primary.

Noted Chris, thank you. Good thing I haven't done it yet!

I will steep, I may have to play around with the amout of chillis, I reckon I'd need more chillis if I steeped.

Search for chilli and you will find some info.

12 chillies chopped and thrown into the fermenter is too much. Way too much. It hurt!

I would suggest maybe 3-4 hot chillies (birds eye, thai) in the boil and then filter out. Dont leave them in the fermenter cos it will get hotter!
