Mead recipes

We were having a bit of a discussion on the "gruit" thread about mead. I was asked if I had any mead receipes. I didn't but did a search on the web and discovered that it is a HUGE thing. Here is just one link to HoneyWine which is about all things mead. I've given the receipe page, but just click back to their home page for other insteresting info on mead. :D

I'm definately going to give this a go when I get enough beer stocked up.

I've worked it down to 300-330g of honey per litre of water, for about 13-15% ABV, and 300-500g of Fruit per litre of water, in order to get enough flavour. Then just add a tsp or two of lemon juice, and 1/4-1/2tsp of yeast nutrient. Pretty basic beyond that, though its my understanding that home mead making is about 20 years behind beer homebrewing in terms of sophistication.

Just bottled 2 week's ago, my first batch:

10- K's honey
25- L. water
pkg - yeast nutrient
wine yeast

drinkable from the fermenter - surprizingly very mild flavour of honey
no doubt there is alcohol in it , one wiff say's it all :shock:

4 month's in the fermenter racked monthly , no i didn't clear it tho was a floatie or two in there.
they say to leave it in the bottle for a year and gets better after that but am going to bet it will never live that long. :lol:

will let you know how it turn's out

Schooner,

Talk to me in a year.

I did 23 litres up of Raspberry Mead October last year, used a champagne yeast, took 6 months to finish before I put it in the bottle. Tried it last weekend.

that raspberry of your's does sound good, any chance of getting it from you and the procedure of making it ?

I have to many empty fermenter's laying around and another tried and proven mead sound's just the treat !!
