This is my second batch that has done this.

This was a beautiful lager.

Yesterday it was complex, not too bitter, had aroma, flavour etc.

Today tried two bottles. Both nasty. Has a really bitter tang. No flavour and an acidy smell.

Normally I leave my beer in the cupboard and jam a tallie in the freezer for an hour and intstant beautifull beer. I decided to put all of this batch in the fridge. Has been in the cold for 3 days now. Yesterday good, today instantly transformed into poison.

Me very sad. My beer has been turned into vinegar. Given the absence of hellfire and brimstone, I am not convinced of the beginning of the apocalipse, however as you can see, something equal or worse is at hand.

Bizarre? An infection in a few un-fully cleaned bottles perhaps?
How long since bottling?
Refridgerating will do nothing but improve your beer ( in my experience).

Weird, were you eating any strong flavoured food at the time?

Any how i have one suggestion, dont put them in the fridge for to long as this seems to be where your transformation is taking place.

I have no idea why as mine seem to get better in the fridge. Im sure that this was of no help but you cant blame a guy for trying hey :lol: :lol:

They have been in the bottle for about 4 weeks. The time line for this brew was about 1 monthe longer than my pale ale that I did and it went the same way. I guess could be infection but it was an instant thing. the bottle are a random sample thing and the first ten I tryed over as many days were great. Last night they were great. I dan't eaten anything beforehand and like even the smell was almost like acid? A residue of sodium met perhaps?

Its deffinately a strange 1 m8 but hey im sure we all like a challenge,
is it possible that when sterilising that maybe you didnt rinse some of the bottles? I dare say that if it was infected that the whole brew would taste like shite.
How did you prime the bottles and appart from taste is there any other symptoms like, is it flat some of the time etc

Ok, I tasted one of my older brews, the one that had this same taste a while ago. Oh my goodness. POO. It was POO. Its smelt like.................
Yep you guessed it. POOOOOOOO. I think there are germs. I don't think they can from the bottles as the bottles came from different sorces. It's either the water or the malt. The water is tap water, and I don't boil my wort, nor did I boil the LDME. I am also guessing that this poo germ likes the cold. Although the poo beer from my old batch hadn't been in the fridge.

Might as well have shat in the bottles I tell you.

JubJub, are you using clear/green/blue bottles or brown/amber bottles?
This is Homebrew country, Piss On or Piss Off!

Brown bottles. They are stored in a fridge for the current brew so haven't seen light. The other Poo brew is kept in boxes.

Where are you cos i know that in different parts of oz the water might as well be poo, not fit for drinking let alone making beer :lol:

I'mm convinced it's germs. I think that once my yeasts went to sleep in the fridge at 4-5*c the germs took over. There is a noticable increase in carbonation from being in the fridge. Once carbonation and bottle fermentation has ceased, I'm thinking that the yeast becomes inactive allowing germs to grow.

I think they might have come from my little bastard..um little bottler.

bye the way Lethal, South East Qld and they havent put the toilet water in our drinking water... yet. :lol:

I dont know if im helping or not m8 but i find it hard to believe that germs would take over after bottling/refridgerating, ive never heard of this although it could be possible,but i doubt it, im not sure why but i dont think that would be it, by the way where in south east, i used to live in waterford for a while ( taking a break from the constant winter down hear) :lol:

Looks like infection city at my place. Might have to close down operations until I can do full boils. Either that or go Lambic :lol: since water is scarce these days, I was thinking about super cooling a fermenter with water in my brew fridge and using a pond pump that I have to pump the chilled water through a copper coil. Is that what you all grain people do?

My wheat beer that tasted like diacytal I am guessing is infected too. I did drop the lid of the kit into the wort :shock: It now tastes realy bad and havent even bottled.

Looks like Beam and coke for me chaps. Birthday tomorrow, turn 30. Hope its not an omen. Oh so sad. No homebrew. At least it couldn't be any worse.
