Best Homebrew

Afternoon all,
Thought it might be an interesting idea to get a collection of everyones best homebrew recipes. I know this may be difficult for some, given the amount of brews some have done over the years, (it's easy for me as I've only done 5!) but it'd be great if you could pick one out. So what I'm after is ONE recipe submission from each replying member. Just pick out your all-time favourite/best homebrew you've ever done and post your recipe/method. To kick things off, here's mine:

PORTER
1 x Cascade Choc Mahogany Porter kit
1.5Kg Black Rock liquid Amber malt extract
50g Choc grain, steeped for 10 mins
Safale S-04 yeast
Made up to 23 Lts
After 12 days in fermenter, bottle primed with Dex, then into the cupboard for (ideally) 3 months.

I can Cascade mahogany porter
900gm LDME
100gm DDME
500gm yellowbox honey
20gm cascade hops.

Dissolve malt and honey in 5 ltrs water and boil for 10 mins. Add can and mix. Add to fermenter and fill to 22 ltrs. Add hop pellets (dry hopping). Toss yeast at 22 degrees. Ferment at 18 degrees. Bulk prime.

Leave in bottle to mature for 3 months. Drink in 3 sittings it was that good.

As I have so far stuck to kits and not ventured into adding hops or experimenting too much, my favourite brew so far is a little boring:

Coopers Pilsener
500g Light Dry Malt
500g Dextrose
kit yeast

OG 1036, FG 1006, 4.4%

Kept in shed at around 15* for 3 weeks. Bottle primed, left for 3 months. Quite refreshing during summer.

American Pale Ale

1.7kg Coopers Aus. Pale Ale
2kg trad pale malt
500gm Vienna malt
200gm crystal
110 gm cascade hops

mash grain, start boil, add 40gm cascade @60 min, 20gm @30min, 20gm @ flame out.
use Whitelabs California Ale WLP001 yeast
Similar to Little Creatures Pale Ale

This ones a simple k+k, but very nice at 3 months

Punters Pale Ale


1.7kg can Coopers Aus.Pale Ale
500gm light dry malt
250gm Dex
250gm Corn syrup
30gm Cascade Hops

This is a very simple beer, but enjoyed by everyone. Its the only k+k brew I now make, got one bubbling away right now :wink:

But, since you were talking Porters, I did the recipe for a JS clone from the Country Brewer recipe sheet:

Wals Bitter Can
1kg Dark Dry Malt
150g Choc grain steeped 10mins
12g hopbag fuggles
kit yeast

I might be biased here, but i think its just as good as the Squires!


( Im starting to sound like a bloody Country Brewer salesman, aren't I ?!?! )

Heres one of my favourites.

Hoppy Stout.

1 Can of Coopers Standard Stout ( throw out the yeast with the can )
1 Grumpys Double Hopped Pale Ale Masterbrew.
500 grams of light dry malt.
Rehydrated Safale US56 yeast.
