Bock

Im planning on making a Bock tomorrow or Thursday, using (probably) a Black Rock Bock kit. Im planning on making it high alcohol, looking at using brew boosters and light malt to make 1kg of dextrose, 1.25kg of light malt and 250g of maltodextrin (or 750g + 1.5g + 250g, or 500g + 2kg, whatever works better). Grain and Grape has a recipe for that kit plus 2kg of light dry malt in their beer of the moment section, so i dont think im too far out of bounds so to speak.
Does that high an alcohol content make it a Doppelbock?
Also, any hop suggestions for me? I was thinking Hersbrucker, but not sure how much i would need, and whether id need to boil some or whether a hop bag or dry hopping would suffice?

i don't think the og will be too high.. 1.068 (estimated on
http://www.brewcraft.com.au/wa.asp?idWe ... etails=120) i dont think is high enough for a doppel. from memory the og for a bock is a minimum of 1.064(?)
as for finishing hops i recently used 20g hersbrucker, boiled in the malt for 1min, in an esb bock kit.. was probly a little too much early on but it's mellowed out nice after 2mths

So what kind of OG and alcohol would I be looking at for a Doopelbock ie could i just use the same recipe and only fill to 19L? Also, would a Saflager sachet be able to cope with it? I want it to be high alcohol, but i dont want it turning out too thick and syrupy either.
At the moment im sitting on
Black Rock Bock
Brewiser Ultrabrew (500g Light DME, 250g dextrose, 250g maltodextrin)
1kg bag of dextrose
1kg of light DME
20g of Hersbrucker boiled for 1 minute in one of the three above (what kind of hops btw - hop bags, pellets or plugs?)
Saflager S-23
Filled to 22 litres
That gives me an OG of 1.081 and a somewhat hefty 9.1% alcohol content, but i seem to recall that yeast has trouble living in over 8%?
Of course if im being too ambitious i can simply use half the bag of dextrose and up it to 23L.

This is a side issue, but if you want to make a nice Bock, try the ESB Bock. Only brews to 15 Litres but its great.

I thought about it, but it ends up being almost $45 including freight for only 15L of beer.

Muntons Bock is a nice dropl. Makes a full 23ltrs as well.

What adjuncts did you use with the Munton's kit? I have one sitting in the cupboard waiting to be brewed....

I put a brewbooster of 500gr Dex. and 500gr dried malt powder. I have one in the fermenter at the moment that I added 21L of water. The last one I made had 23 L of water which was pretty good. Hoping the 21L brew will be even better.

$45 including freight for only 15L of beer
That is only $22.50 per slab which isn't too bad if it is good.

Actually, thats less than 2 slabs worth.
Anyway, went to my HBS for the gear and got a good recipe after finding the blackrock can and talking to the guy there. Told him i had 1kg of dex and the brew booster, he suggested
1.5kg of dark liquid malt
saflager yeast
boil 15g of hersbrucker for 10 minutes then strain and add
Primary should take at least 2 weeks, maybe longer
Rack to secondary, dry hop 25g of hersbrucker and cold condition for 8 days (i think) in a container that has very little headspace between the airlock and wort.
I wish my memory was better, because everything from racking onwards is muddled in my head, though im pretty sure it wasnt too much more info.
He also suggested i try a Triple bock (about 11% abv) next time

I was going to try the following adjuncts with the Munton's Bock kit
1.6Kg of liquid extract (dark, or light not sure)
0.5Kg of Vienna malt
0.5Kg of Munich malt and maybe 0.5Kg of dry malt extract

At this stage my plan is to go with the Grain and Grape recipe. Muntons Bock kit plus 2 kg light dry malt extract, saflager yeast. Seems very simple.

I bottled the above Bock recipe today. At first i thought it smelled odd, but after remembering what the ABV was i breathed in again and realised it was actually pretty good. Now, to wait a number of months while it settles down in the bottle.

Will be brewing an ESB bock shortly, thinking of using Saf 34/70 and brewing it for about 14 days in a fridge at around 10-12 deg .
Also might add 1kg of dry dark malt to the kit and make it up to 20lt.
Any comments or tips as this will be my first go at the ESB bock.
Did a Esb Bavarian lager with 34/70 a couple of months ago and added 750gr of dry light malt and made it to 23lt and came out pretty good.
