The production of Sake is a long and labour intensive process involving the use of skills gained only through years of experience working under master brewers. It's not a process that can be emulated by homebrewing methods.
Don't even bother... Or just drink metho - same mouth feel and after taste!

thanks for your uninspiring words,there are recipies out there,but for the cultured drinker like yourself you already knew that.People once thought brewing beer was long and labourious but look where you are mate!As for your metho comment ,mate you gotta get off that VB and get out more. :lol: :lol: :lol:

Now I'm motivated, sake here I come!!! (Go figure, a guy who questions my level of culture yet spells sake with an "i", motivated me!)
I'm in the process of obtaining some koji kin from Japan (that's the special mould that is grown on the surface of the rice "mash" before it is fermented), and I've got a 10kg bag of koshi hikari (Japanese short grain rice).
Once the koji kin arrives, my brew will be off...
For those keen on having a go yourself, of the 4 sites listed below, 3 give recipies for rice wine - only one is for sake. Go here:

hey LB in the three dialects (kan)of japanese that are spoken it can either be "i" or "e" but what the hey you go for it SHINTARO,just being smart,its all good LB.(dont worry oliver I"m not turning into Munkee!)
