Authentic Aussie yeast strains

Post by billybushcook »

Since going to AG Ivé been leaning towards making typically Aussie beers, both Lagers & Ales.
Being as AG gives you the flexability to select every ingredient, I mostly stick to Aussie grown Malts & Hops, with the exception of using UK grown Flaked Maize & Amarillo hops for Aroma.
Now looking at yeasts,
The idea of making an Aussie beer with a British or American Ale yeast or even a European Lager yeast just doesn't seem to ring true!
Obviously Coopers Ale yeast is obtainable but are there any other authentic Aussie yeasts available?
Primarily thinking of Lager yeasts being as so many of australian, comercially made beers are Lagers but these guys are filtered & pasturised making it impossible to culture from them (or so I believe)

Does any one know what strains are used in beers like Little Creatures, James Squire etc, even though they are Ales.(Assuming that these are beers native to Aus,)
How would I get my hands on some Aus Lager yeast?
Any ideas?

Mick.

Don't know about the others, but I'm sure Little Creatures Pale Ale is brewed using US05 or the liquid equivalents, WY1056 or WLP001.

LCPA uses 1056 or US05 for primary but secondary strain is a lager strain.

I'd guess the JS range is fermented with an inhouse yeast strain.

If you want your own authentic aussie yeast strain just leave the lid off the fermenter, something will float by and start fermenting your wort

Interesting,
it should be possible to culture it then?

Yes but I'd bet it's a stock standard Wyeast or White Labs strain and not australian.

That culture of lager yeast is for what purpose in draft beer
Here is an interesting idea why don’t you go to the brewery and ask
Mick I personally wouldn’t leave the fermenter open
