I've gone the full circle. Used to rack, then got some infections in secondary, stopped racking, and now rack again.
If you're bottling and are pouring the beer off the sediment, then I reckon there's not that much to separate racked from non-racked beer. I keg, and have found a few of my non-racked beers just carried too much sediment over into the keg, such that they stayed very cloudy and had a fair bit of hop debris in them (I know it was because it was unracked because this was in my 12L keg, and the second half of that brew which was racked into a 15L fermenter was crystal clear after kegging). Additionally, if you're going to drink the beer from the bottle (I produce a fair bit of beer for events held by a club I'm a member of, and everyone drinks the beer out of bottles) then racking is an absolute requirement.
As for racking twice: I think the risk of infection and/or oxidation outweighs any benefit you would gain from it. Unless you're doing it to bulk-prime.
One other thing: I always add a tablespoon of dex to my brews when I rack, to ensure a good blanket of CO2 over them at all times.
