Agreed - if you're careful you'll be ok.

I sometimes use a bit of dex to create a headspace too. Even a tablespoon seems to be enough to get it going a bit.

Yeah I sanitise everything (could be a bit lazy sometimes, but everything gets a good bleach soak for at least an hour (if not overnight) and a big rinse afterwards... Will move to nappysan soon though.

Really dumb here, but when you say sealed secondary, I'm assuming a 2nd fermenter with an airlock is still fine?

Yep, an airlock is fine, he was referring to a sealed container like a cube with a screw cap lid. The co2 creates pressure and needs somewhere to get out. Glad wrap of airlock is fine.

On the sanitisation, I use boiling water only, with an occasional sterlising powder (the hb stuff), and I find it works great. I'm going to get some idophor soon but I don't like the idea of adding chemicals that need to be rinsed. Just me though.
