I don't have anything against it. It's a good, quality yeast. I think a lot of ppl don't like it because of the way the Coopers kits instruct you to ferment so warm (up to 28°C I think). It's not good up that high, much much better down at 18-20°C.

By the way, have you tried fermenting from Coopers yeast recultured from a bottle? It has very similar fermentation characteristics to the dried yeast, but a very clean, less fruity, finish.

Coopers is often overlooked because it's so common around here (many start out with Cooper's HB kits) ). In reality it's shipped internationally along with the best of the dried yeasts...

I did a nice Coopers blonde with the following:

Coopers Canadian Blonde + kit yeast
1.5 Kg Coopers Light Liquid Malt Extract
500g Yellowbox Honey
10g Hallertauer Hops (AA - 4.5%) @ 15 mins
10g Hallertauer Hops (AA - 4.5%) @ 5 mins

It was shitty in the first 6 weeks though; the honey tastes tend to linger for some weeks after bottling. It's a great brew now though, sweet and flavoursome, great for summer, pity there won't be any left by then :( .

I'd go Saflager yeast next time, other than that, its a great kit. Came out above 8% too :twisted: .

Use a Morgans Canadian Light firstly. Add either a Brewcraft #15, or a Thomas Coopers Light/Morgans Pale 1.5k malt.

I do not mind Coopers yeasts at all. :wink: The Bavarian is a little harsh IMO, but the rest are OK with me.
