G'day all,

Just fishing for some new ideas, methods, ingredients etc.

I'll kick the show off with this one that has turned out (imho) to be a very nice drop.

Ingredients.
Coopers Pilsner. 1.7kg
Morgans Wheat Malt. 1.0kg
Coopers L.D.M. 500gm
Coopers Dextrose. 250gm
Powdered Coriander. 1 hpd tsp
Zest of 3 Oranges.
Saaz Pellets. 25gm
Cascade pellets. 15gm

Method.
Bring 1 litre water to boil, add 200ml Wheat Malt and 25gm Saaz. Boil 30min.
Zest of Oranges added 10min into boil.
Coriander added 15min into boil.
15gm Cascade added 20min into boil.
Heat turned off at 30min total.
Added L.D.M 500gm, Remainder of Wheat Malt, 250gm Dextrose and Coopers Pils Kit to pot, mixed well and transferred to sanitized Primary.
Total volume up to 23 litre with cold water and 1/2 litre jug of ice to cool it down.
Pitched 11.5gm Saflager plus 7gm kit yeast. ( also saflager ) at 18 deg C.

I originally had plans to get a good start to fermentation and then reduce the temp to maximise the yeast, rack and bulk prime, blah blah blah, but work circumstances didn't allow.
My brewing notes reveal that it sat in the sealed Primary for 3 weeks, Bottled 27 tallies primed with 10gm dex.

Thanks to O&GHBB i've evolved from k&k to a producer of good beers. (imo) :wink:

my favourite at the moment is -

1kg joe white light munich malt
1kg joe white vienna malt
500g wheat malt
(grain mashed @ 65 for 60min)
1.7kg extra light LME (post boil)
all saaz to 29ibu.. mash hopped, with additions at 60, 20, & 10mins.
white labs san fran lager yeast (1 litre starter)

I think I will have to try using some malts soon as I get my keg system.
I've only been using the tins and occasionaly some hops and honey.

I am not into AG so here goes, is simple and easy:

1 can Tooheys Dark Ale
600gm of DME
400gm Maltodextrin
15g of Willamette hops.

Dissolve malt and maltodextrin in 2 ltres of boiling water. Add Tooheys can and mix well. dry hop 15 to 20g of Willamette hop pellets.

Fill fermenter to 22 lites and add Safale at correct temp. Ferment for 1 week and then to secondary for 1 week. Bottle and let condition in bottle for three months. Chill bottles and drink.

Closest thing to Tooheys Old I have found and I love it.

I know there's a lot of anti LN about, but can't help it seeing as how it's my favorite tipple and what I was weaned on.
