Wassa's Honey Porter

I have done this one and it came up great! I am not sure we even need to put this up for vote but I will anyway...

1 can of Cascade Mahogany Porter
1 KG of Dark dry malt
500gm of Yellowbox honey
15gm of Cascade hops

Ferment with Safale. Bottle and leave for 3 months in bottle.

I'm amazed! I wonder if that 'person' has brewed/tasted that beer. Damn it was tasty.

Just because they haven't brewed the recipe doesn't make them a cockhead. But this beer is a favourite, I've brewed it about 8 times I think. It's one of the crowd-pleasers for our semesterly celebration, for which I always brew a golden ale, a honey porter and a hoegaarden. They always disappear before anyone drinks the commercial shit... Boags or Carlton Draught.

I thought the rule was if you had not brewed the beer you were not allowed to vote? Maybe they misunderstood what my question was asking? I guess it is not very clear if you did not know you had to have made the recipe to be allowed to vote...

Maybe they made the beer but didn't like it
I haven't made it (so won't be voting). I just don't like honey in my beer

I may or maynot be a cockhead :wink:

Maybe the cockhead is he who jumps the gun without knowing what the reason was!! :lol: Not everyone is going to like the same thing even if they have made it but there is know need for names just because they have there own opinion now is there.....

It was actually one of my better brews to my amazement as I had only heard bad things about the cascade kits.

Funnily enough a bloke around the corner I ran into tasted one of mine and when I told him what he was he couldn't believe it as he had made the kit in Nov but pretty much to the directions and said it was crap, now I have enlightened him to the wonderful world of hops and malt extracts. :D

I'm very pleased to see that my recipe is so highly thought of.

I put a similar brew to this down yesterday... Didn't have any Cascade, replaced it with a plug (about 13 grams) of Perle. Also used dark liquid malt instead of DDME, so it'll be maybe .3% less in alcohol at a guess. Expecting around 4.5%, which is bang on what I'm after.

Also, I used S-04 - what has everyone else used?

I've got a tin of this stuff in the cupboard and was planning a partial mash version. Does anyone have a suggestion on the grain bill? I was thinking of mashing 1 kg of pale malt with probably 100g choc malt.
Great recipe as it is, though. One of the best I've done out of 35+.

Has anyone experimented with other yeasts in this? I have a leftover trub from a Belgian Tripel that I am tempted to use....

For a partial, I'd probably use some med crystal, some amber, and some choc.

I just PM'ed rwh asking that exact question "what yeast to use" as I was trolling through the site and his name came up alot on this topic... (should read further hey :oops: )

Anyway, I just bought some LDDM and an S-04......rearing to go as I have the rest of the stuff at home.

Cannot wait for this one.....

And no, I was not the cockhead :lol: .

I am going to go the Kit Yeast, even though I bought the S-04 today. I have made this kit with the stock yeast before with no issues............+ rwh told me to... :mrgreen:

I am going to do it tomorrow or Thursday as my lovely wife is ill and it would be rude of me to be brewing whilst she is not well... :wink:

G'day men,

This recipe looks interesting. I made a nice Honey Pilsener last summer and was thinking about a new honey beer this summer. This one looks fairly simple. Is there any devil in the detail, or just regular procedures for these ingredients?

I've not had many Porter beers, but I do remember enjoying James Squires Porter on and off during the winter of 2003. What are the typical characteristics of the Porter style?

I've never used any Cascade products but have heard bad things. Will it make 23L? Are the hops in this recipe pellets or the teabag-things?

Hi Throsby,

The porter style is a bit of a cross between a dark ale and stout. Not as roasty and bitter as a stout but still dark and filling. This will turn out quite different to the JS porter because of the honey and the hops used. It will also come out less bitter than the JS.

As far as the Cascade products go, I've used the porter and pale ale with a good deal of success. Both times included extra malt + hops and using a different yeast. The recipe is for 23L but feel free to drop that a bit if you want a stronger brew.

For the hops - you can use either but pellets are more flexible IMO.
