I made some changes in the sober light of day

Went with 110g FWH and 20g at flame out, from memory I think it was around the 30 IBU's

good man... just out of interest, what sort of efficiency are you getting?

Also, i find with these really low aa% hallertau hops, i bitter with perle (which is supposed to taste similar to hallertau), and flavour and aroma with the hallertau. Just means you get more brews with your hops.

Put down a version of Dr Smurto's famous golden ale yesterday, but using crystal malt (80L) instead of the caramunich, and Target as the main bittering hop, 35 gms of Willamette at 10mins. and then Amarillo additions at 5 mins and dry hopping. I didn't have any Centenniel or related US bittering hops left :( . Anyway, pitched this onto a SN Celebration Ale clone which had Wyeast 1056 doing the biz - it was fermenting vigorously within two hours! My plan is to put this into a 20 litre keg I was given. Now, to learn about kegging.... :?

Cheers

Between 70 and 75% Brewhouse

I've used Perle a few times and reckon it probably would suit a Hallertau driven brew, but I really want to do some more single hop brews.

I love all Saaz brews. I've bittered some with N'Brewer and didn't like the results as much.

An all Tettnang brew will be coming up soon

I use perle to bitter in a lot of beers, from pils to APA to a stout.

I've just brewed an experiment.

Tin of Cascade Lager
400g honey
150ml lime juice
1 pk Coopers BE2
1 pk Hallatau hop pellets
safale yeast

I'll be interested to see how it turns out.

Yesterday I bottled a batch of Cascade Pale ale and a batch of Brewcraft Cream Ale.

"Snail Ale" so named for the slow process involved - 6 months bottle conditioning.

1.7kg Coopers Real Ale
1kg LLME
500g Honey
12g Cascade @ 15mins
12g Cascade @ 5mins
6g Cascade @ flameout
To alcohol! The cause of, and solution to, all of life's problems!

Brewing a resourceful 'cupboard cleaner' standard bitter with available ingredients.

2 cans morgans light liquid
50g carafa
50g black patent
250g Carahell (badly cracked, so probably equates to less)
250g Carapils (cos it needs to be used somehow)

I think this was the hop schedule:
30g EKG 5.1% - 60
20g EKG 5.1% - 20
20g Styrian 2.8% - 20
20g EKG 5.1% - Dry Hop
30g Styrian 2.8% - Dry Hop

Windsor Dry Yeast

Ramped from 18 - 21 degrees over a week

No chilled this last weekend, pitched the yeast tonight

3.50 kg Pilsner, Malt Craft Export (Joe White) (3.2 EBC) Grain 70.00 %
1.50 kg Corn, Flaked (2.6 EBC) Grain 30.00 %
15.00 gm Galena [12.20 %] (60 min) Hops 21.2 IBU
0.50 items Whirlfloc Tablet (Boil 15.0 min) Misc
2 Pkgs SafLager Swiss Lager (DCL Yeast #S-189) Yeast-Lager

I got a lot of the corn into the kettle (using a Beerbelly false bottom). Would this matter at all?

Berliner Weisse... (or as i like to say holden Berliner)...

1.7kg pilsner malt
1.7kg wheat malt
15g perle at 15mins (4 IBUs)
3191 berliner weisse blend yeast (it contains Wy1007, lactobacillus and brettanomyces).

Makes about 26L...

easiest beer i have ever made... dont even need to boil if you dont want.. you can get the IBUs through FW hopping.

It is not a beer for everyone... the lactobacillus makes it sour...

Brewing on 1 Jan - it will be an attempt to replicate Hobgoblin. I'm putting the finishing touches to the recipe this arvo...I'm in the middle of an email exchange with some UK brewers at the moment!! :D

Image
Hobgoblin
Traditionally Crafted Legendary Ruby Beer
Hobgoblin is strong in roasted malt with a moderate hoppy bitterness and slight fruity character that lasts through to the end.

The ruby red coloured Hobgoblin is full-bodied and has a delicious chocolate toffee malt flavour balanced with a rounded moderate bitterness and an overall fruity character.

ABV: 5.2% in bottle & can, 4.5% in cask
Bottle: 500ml
Cask: yes
Hops: Fuggles and Styrians
Malts: Pale, Crystal and Chocolate

Cheers,
TL
