How long can the mash sit in the fermenter before bottling it.

The stuff you put in the fermenter is called wort. Mash is the stuff wort is made from. How long can wort sit in the fermenter? Until long after it becomes beer. Depends on the yeast/temp/etc. The usual figure given for ales is 4 weeks but you can get away with more if circumstances are correct.
