Fermenting US05 cold

What would be the lowest temp. US05 can be fermented at?
Says 17 degC on the site, but I'm sure I've read somehere that it can run its course at 15degC. Looking at a possible pseudo/fake lager idea using it.

Regards

I've fermented US05 at 16 degrees but it will have a tendancy to drift off if it goes too much lower than that. Even 17 degrees with that yeast finishes pretty crisp and I've done faux lagers with it at that temp.

I've done it at 15*C and it does keep stalling. I can't say I've ever noticed a difference between a 15*C and a 16-17*C fermentation.

I regularly ferment at 16-17 with US05 and it
produces a very good faux lager.
Most people that drink it cant really tell its an ale!
S189 ferments well at these temps also and is a lager yeast.

There's a bit of discussion on the AHB forum at the moment about s189. Apparently Ross from craftbrewer regularly uses it at 18-20C with good lager results, no fruit flavours. Going to give it a go myself.

I used US-05 to do a "quasi-Kolsch" a couple of years ago. According to my notes, the temperature was down to 12 degrees (!) and the whole thing took a month to ferment. I had no temperature control and I have some doubts about the thermometer's accuracy at low levels - so I would say that a ferment at between 12-15 degrees is more likely.

There seems to be a consensus that this is the yeast included in the Coopers European Lager kit, correct? If so, I've found that this yeast works fine in lagers up to around 18 degrees; any higher than that and a slight ester profile becomes apparent. That said, if you're generous with the hops this can be addressed somewhat.

Fermented my house mid with US-05 at 15-16degC , a definite crisper taste than at 18. Used no finings, just an extended CC (5days) before carbonation, and came out clear as. Will use this combo more often, me thinks.
