I've thrown 2 and 3 litre chunks of ice, frozen in sanitised containers wrapped in sanitised cling film, into hot wort after the boil. Worked out absolutely fine. In one case brought the wort down to pitching temp with a substantial amount of ice still not melted - had to fish it out by hand (wearing a new pair of thoroughly sanitised rubber gloves).

I used to do this as well, and with good sanitation, never had a problem.
