I'm assuming a big stainless steal pot is the best, but then the most expense, option. So i understand an esky for cost. But I would have thought plastic wouldn't cut it. Do you have to make sure you get a brand newy with no scratches? Otherwise it would be hard to clean hey. And do people generally convert them themselves or do you take it somewhere and pay to have it done.

An esky has many benefits over a SS stockpot when used as a mash tun. I will not list them all, but it is probably the most commonly used. They are very easy to convert yourself, and you do not need to worry about it being extremely clean because the wort will be filtered through the grain bed and boiled for 60+ minutes. A very cheap and easy mash tun can be made using the tutorial found on my website. I have since replaced the garden irrigation tubing with a SS braid and it is much better now!

An esky is an insulated vessel, a stainless steel pot is not. So very little modification is needed as Kev pointed out.

Welcome to the forum mate! One other point not mentioned is that a stainless mashtun will allow you to direct fire it in order to do step temperature mashing whereas an esky obviously cant sit on a burner - you would have to infuse with boiling water or use an immersion element. That said, my 10 Gallon rubbermaid esky and immersion element is great combo and I'm happy with what I can make with it.
