I have just bottled some brigalows Cider.
I used 1.25 kg sugar and 1kg cored apples, OG 1056 FG 0994, I think this makes it roughly 8.5%
Any tips on how long before I can drink the stuff or should I just run the car on it?
I was aiming for about 5.5% alcohol any tips on where I went wrong?

You didn't go wrong! It sounds great! The extra apples always give a good kick. I would give it 4 weeks before even sampling it. It sounds like a 3 month for maturity batch.

I got 0996 on my last cider. That is pretty standard UC1
