what is it with me and the bloody yeast lately ?
Anyhoo,
After a lot of searching and taking notes etc, I've come up with a nice sounding GB recipe.
Brigalow Kit
500gm fresh ginger
2 lemons
ground nutmeg
ground ginger
cinnamon
brown sugar
honey
golden syrup
cloves
All this calls for Champagne Yeast, which I've got 10gm of..
I'm now stuck on wether I need the Yeast Nutrient ( 4gm ) that's supplied with the kit. ?
Any Clues ?

Ginger Beer Yeast Nutrient
If the kit comes with yeast nutrient, use it. It is always worthwhile. I often just kill a packet of old yeast with boiling water, and add it to my brew. Nothing beats dead yeasties for nutrient. It is a good way to get your yeast established in some of the more difficult environments (like high acid, less attenuable fermentable sugars, etc.)
This fits with your recipe, seeing that you are using brown sugar, honey and golden syrup. It just helps them get going.
Also, add your nutrient BEFORE the yeast.
