I would say YES water quality would make some difference.
I hold up Southwark as exhibute A.
Ive not had much experience as the water where I live is hard but quite palatable, I would say filter your rain water and stick with that.
I havent noticed a plasticy taste with mine.

Hi all, long time lurker,part time drinker.
I've not long ago put down my 3rd brew, a Tooheys "special" lager + 1 can of brewiser liquid brewing sugar, temp seems to be sitting around 20 to 21 C and its quietly condensating in the corner.

Heres the problem,
3 weeks ago I brewed up a batch of Coopers ginger beer, made it non alcoholic for the kids.
Had a look at it today as theyre bugging me to try it, MMMMM we have floaties on top and sedement on the bottom, this did not go down well with the kids, funny that.

mate these are basically what commercial beers come in these days.
They are your brown tally or stubby bottle which have been redesigned by bean counters ie why spend money makeing a good one which lasts forever when a once only use light weight one will do ...

Funnily enough Ive just done my first brew, same kit same beer.
It passed its 2week birthday last night and as such I had a couple.
It tastes alright and has a decent level of fizz even though I partially froze the bugger,( hard to judge temp with PET bottles) tastes better than the coopers ...

Thankyou both for the replys.
Wassa, Im up near brisbane and the temps here are still getting over 30C during the day and 15C at night.
Where the brew is stays between 23 and 28C.
I have family in melbourne and they tell me they're freezeing ATM so Im beginning to see coopers logic ...

leaped in and bought a coopers kit, read the book, laid down the first brew last sunday, (almost a religious experience).
