I do 7l Boil extract beers all the time... here's my standard approach.
1kg LDME
1.5kg Malt Extract (Coopers Unhoped extract) or 1 tin of Morgans and another 500gms of LDME
Here is my Golden Ale recipe:
1.00 kg Light Dry Extract (8.0 SRM) Dry Extract 35.71 %
1.50 kg Liquid Malt Extract (8.0 SRM ...

Those ESB kits are pretty good outta the tin.
I'd steep 200gms of Crystal Malt / strain / boil for 10mins then add 20gms of Cascade at flame out and then into the fermenter with US-05 or similar.
If your racking to secondary you could also dry hop another 20gms of Cascade or similar.

I threw a pack of coopers yeast in a barley wine I did last week.. not sure if it helped but two packs of US-05 took it from 1.095 to 1.032 in 6 days

Sounds like your learning fast 
I'm convinced its impossible to get anything in brewing right first go. My first keg poured flat, then all froth, then flat again. Second keg is pouring lovely.

Yeah I wasnt sure about the yeast, gravity is high, but volume is low.. maybe a big starter is the go? Or would a Wyeast Smack Pack have enough to get through it?

I wanna have a go at a big yankee Barley wine, its gunna need heaps of hops/malt so Im going to do a half batch..

boil the dex and ldme in about 6-7l of water for 15mins with 20gms hops as above.. when its done add 30gms of d-sazz and cool it in an ice bath.
Into the fermentor with the coopers kit and ...

I dont use 90gms all up in my APA's
If you wanna nice euro lager id ditch the cascade and just add 30-40gms of the D-Sazz and make sure she ferments at 10-12c

You really should give honey at least a couple of minutes boil to kill off any nasties that could lead to possible infection.

In Beersmith break your fermentables up so you can just mark what you are boiling..
For example I usually do
1kg LDME
1.5kg LME (Coopers Extract Can)
Hops
I boil 500gms of the LDME in 7L.
So I enter it into Beersmith as
1 x 500gms LDME
1 x 500gms LDME
1 x 1.5kg LME
Then on one of the LDME ...

Yeah I had the same thing, over-carbed after a month or two, and head growing in the glass, I put it down to mild infection.
I stopped racking to secondary and now give the fermenters a good 24hr soak in bleach/vinegar every couple of batches!
