You probably got this all sorted but for future forum users. Your lines are too short, you need to slow the beer down through the lines longer runs of hose will acheive this.
There are numerous calculators/spreadsheets about with the technical information if needed.

You can still save the beer. Bonus. Now you have Brew Mate it shouldn't be too hard either.
Assume you're going to raise the final volume to 18.41 litres with a 1 litre mini boil. Input this to brew mate. Your IBU's will drop slightly along with EBC but no biggie, as you're going to correct them ...

Yer the key is drinking slowly and waiting 15mins or so till after eating to avoid throwing up, Father In Law had one (he passed away last year, multiple health issues) and a good mates partner has one and she is still a coke fiend on some days.

Just got into kegging myself, so much easier than bottling! Should have done it before now, will post some pics tomorrow sometime. Picked up a 501lt fridge for nix and have made it my kegerator, only one tap now but the fridge hold 3 kegs easily and with some small mods will take 5 and still has ...

It's awesome isn't it, despite the dated info on the site. It is still the better of the 2 options in Hobart, Amanda (the owner) is always up for a chat on either beer, wine or spirits. +1 for a controlled fridge, best thing I ever did.
Being short of space though the pump and air stone would be a good idea, least your yeast will get off to a great start and hopefully counter (some) of the temp swings you may be getting.

gruit was commonly used to bitter beer along with a lot of other herbs and spices.
I believe the Poms were the last to use gruit extensively when hops had already dominated the rest of the brewing world, don't quote me on it thought.

Research the 'dry stout' style, there is no lactose in guiness, swap the yeast for an english or irish strain from the same company.
Drop the vanilla beans and most if not all the choc malt, add some black barley maybe some flaked oats for mouth feel and tighter head, that would be a starting point ...

It will be dark, sweet and nothing like a guiness.
However it will most likely be pretty nice if a little heavy in sweetness and have a feeling the vanilla beans will shine through a LOT

Sounds like you enjoyed them, good stuff.
Both are all Amarillo beers, Wyeast 1469 for both too so not sticking to any guidelines at all, very much mongrel beers but still quite enjoyable as you have found out.
Oh incidentally if the names and taste didn't give it away both are can based the wheat ...
