I've got a stack of malts in the shed that need using up.

1kg JW Munich
0.5Kg JW Crystal
Then some random amounts of Flaked Barley(about 0.5kg) and Marris Otter(about 1kg)

I try mine at 2 weeks. If it tastes good I usually drink the first half of the batch within a fortnight or so (depending if the better half likes it :shock: ) and leave the other half as long as physically possible. I would say YES water quality would make some difference.
