I would be careful of the hot water tap as a clean uncontaminated source of water.
Depends on what sort of hot water you have. If you have a gas system that heats the water as it comes through (i.e. no hot water tank) than yes it would be pretty "clean", if you have a heated tank like most people ...

Im having trouble with paler larger type beers, they seem to have a rockmelony pang to them, someone mentioned to me its probably the heat in Brisbane causing this. My stuff is 100% cean at all stages and stout and dark ales are going OK. Shoul I use a different yeast here, particularly in summer ...

I've had wierd results too.
I put it down to poor mixing in the fermentor. i mix it like mad these days.

Well haven't tried something like this myself but I'd just move it.
Thinking about the issues (as far as I can figure out) they'd be: spillage/fermentor damage/catastrophic beer loss or introduction of oxygen into the fementor. I'm not aware of any other potential problems.

You'd have to think it'd be a good leg up into working in the field, either as a business operator or an employee. If nothing else you should make some good contacts whilst doing it.

When bottling I use a flexible plastic tube between the tap and the filler tube which allows me to leave all the bottles in a crate on the floor and move the filler tube between bottles.

Would support them, but realistically shop for beer about once a year (hey I'm brewin' some reasonable stuff here at Smabb's global headquarters!) :) so can't imagine i will be a big help keeping the lads doors open.

It would seem unusual that you have 2 dud yeasts. The answer probably lies elsewhere.
I take it the brew is still at 22 degrees? Given its your third brew (I think?) what did you observe at this stage in the other 2?
(Depending upon your set up you don't always get bubbling, gas can easily escape ...

I've used kit yeasts from all and sundry, never had a problem.
An issue with kit yeasts can be its storage, but if you bought from a place with a high turn over it shouldn't be a problem.
