I have read it generally takes 2 to 3 months for a natural fermentation with wild yeast, sounds like you would have a very non alcholic brew as natural yeast can take upto 3 weeks just to start, there are some good books on cider which have some details like "craft cider making" by Andrew lea and he ...

Thanks wrighty,

I will dilute the spirit out a bit I think, I just hope I dont need an expensive filter with the high activity carbon just of yet, I will try a few batch's and decide if I like the spirit, but i guess a good filter will make better quality spirit too, as for now I will have to make ...
