Just a twist on this one,


Went back to the states for a few weeks and tried SA winter lager. Has coriander and .............citrus (maybe). I could google it for more info, but it is a fantastic brew from a swiller.

Definatley better than the boston lager.

You hit the nail on the head. Got up to check the brew this morning only to find an 8'' brown stain up the wall!!!
It is bubbling like mad, but only air now not krausen!

Two tin stout............

Hi all,

Got a bit creative.................maybe too much.

Just put down a two tin stout.

Two tins of coopers stout
350g of dex
200g of lactose
60g of coca powder

Sounded like a good idea at the time, but the bitterness of two tins and the coca powder...........................

Mate you are a champ. I have JUST tried mine, Its been in the bottle for a couple of months now.
Bloody fantastic!!!, It does not quite taste the same as the original but I did modify it a bit, I'm no beer conisuer but I know what I like!!
Mine ended up being 5.5%alc so not a quaffer by ...

DavidP, I left the pulp out, I did not want any extra cr@p or sediment in it. Even tho I plan to rack to secondary. Even with all the fermantables in it, it is only slowly bubbling away. Its gunna be a while before I bottle I think.

I used a mates electric juicer, put in about 700g of peeled ginger and out came about 200ml of juice. Smelt fantastic. Did the grape fruit the same way..............................shoulda done the lemons like that too :x

I made a few changes to the GB, put in 750g of lactose and 1.7kg of dex ...

Lemonade and GB recipes..................suggestions?

Gday Guys,

Just putting down a lemonade and a GB.

Lemonade recipe:

1.2L of lemon juce, freshly squeezed.......my arms ache.
200ml of Grape fruit juice
100ml of ginger juice
2.5kg of dex
1kg of lactose
7g Yeast nutrient
7g Safale yeast

Should I add 0.5kg of LDME? for some body?
Or any other ...

Does anyone know just how much lactose to sweeten? Hard question not having tasted it but is 1kg an overkill?

And for the record the kit I used comes out at 3.5%.

Gday Dragon,

I used a local brew shop blend. Its basically about 0.5kg of malt and a ginger booster (Basically GB cordial). I added another 100ml of booster and 1kg of sugars, It does not specify what sugars, but I suspect a mix of Dex and lactose. It tasted pretty good on bottling, I'll give it a ...

Sweetner.........Lactose?

Gday Guys,


Just bottled up a ginger beer kit, it tastes pretty good but I like it sweet. I have read on another post here that adding lactose at the secondary will do it.

Does Lactose hold its sweetness? Does it fully ferment?

Hi there,

I had the exact same problem, It smelt terrible going into the secondary, its been there for two weeks now and the missus reckons its ok now.
I dont know what it is maybe the wheat?
