i recently bottled a coopers sparkling ale after 14 days even tho it had stopped fermenting after 8 days (because i was too lazy to clean the bottles earlier). So i want to make a cider using extra apple juice but all the juices i'm lookin at have food acid(330) and vitamin c(300). now i don't see how the vitamin c could cause a problem but from what i've read food acid(330) is citric acid which buggers fermentation. can anyone give me a specific brand of ...

I did Coopers Pilsener with 20g saaz hops, 500g LDME and 400g dextrose. Turned out a treat! Maybe you could try all malt instead but just remember to add the saaz!

i think my og may have been a bit lower because i used more water. i used 23L instead of 22L. By my calculations it came out to be 6.1% alcohol and tasted good while bottling so i reckon it should still be good :)

thanks for the replies. i will bottle tomorrow. it tastes ok out of the fermenter so i dont think no krausen will be a problem. i just found it strange because all the other brews i've done had it.

Coopers Sparkling Ale fg?

Hi all

I made a Coopers Sparkling Ale to recipe on their website:

Coopers Sparkling Ale can
1.5kg liquid malt
500g light dry malt
300g dextrose
Made up to 23L. Fermented at 20C

The og was 1056 and after 10 days in the fermenter its down to 1014. Its been the same for 2 days so I think its ready ...

i did the cooper's mexican cerveza with BE2 earlier in the year and the final gravity was 1011. i didnt have any exploding bottles so it sounds right to me :)

If the the kit you are referring to is the Cooper's Lager from the "Original Series" then I believe it actually comes with an ale yeast so tempuratures around 18-20C will be fine. You only need to brew at colder temperatures if you are using a true lager yeast.

I have read on this forum that the apple juice has to be no preservatives but is it ok to use juice that is 99.9% apple juice containing food acid, flavour, colour, etc or does it need to be 100% apple juice? Does anyone know of a brand that is definately 100% apple juice?

I am planning to make a cider next and I have been looking for some 100% apple juice with no preservatives to add to the kit. Most of the brands I have seen in the shops say "no preservatives" but looking at the ingredients they have 99.9% apple juice, food acid, flavour, colour, etc.
