Beautiful, Probably one of the best blacks I have ever had...and I've had a few. I've since made the same recipe with 20g of roasted barley for a subtle roasted/coffee flavour...yum.

Incidently I named it ...

Coopers Sparkling Ale $39.98 a carton

Hi Guys,
Picked up two cartons of CSA at Erina Woolworths Liquor on Friday arvo for $39.98 each. Pretty good when VB was going for $38.
Cheers,
Jay.

Shazzam,
You may find the chocolate grain a bit overpowering for what you want. Will still be nice no doubt just maybe not in the vein of the JSAA.
But fortune favours the brave so can't hurt to gi'it a go.
I'd really reccomend 150g of english crystal grain instead of the choc and crystal.
I have ...

Pig Iron Lager (Steel River Brewery)

Anyone in Newcastle tried this? I had one the other night at the Grand Hotel and I must say it's not a bad drop, despite the ad with James Blundell being a real turn off (The ad's shot at The Grand btw).

A lot darker than your conventional lager (New/VB) and quite sweet and fruity.
Would recommend ...

Newcastle Porter

This is a real ripper although I must admit I got the recipe from the blokes at Mark's Home Brew (Islington).

Think Tooheys Old meets JS Porter meets Coopers Dark Ale.

1 Can Newcastle Brown Ale (Brewcraft)
1 Can Liquid Amber Malt (Black Rock)
250g Light Chocolate Malt (steeped 15min)
15g ...

Not quite the same as a JSAA (but pretty close), probably due to the bavarian lager's influence and the lager yeast making it drier and more lager like.

Like I said if I'm after a quaffer with a bit more flavour this is my poison.

Cheers,
Jay.

I agree with fruitiness being attributed to using sucrose and fermenting at high temps but I also think we are overlooking the fact that ales generally are fruity.

Since most yeasts supplied with homebrew kits are ale yeasts this explains a lot of the fruitiness.

One way of eliminating the ...

I'm not the greatest expert on the subject but I have experimented with some lagers over the winter.

I found that you can massively improve a lager by simply leaving the bottles for at least 3 weeks in the fridge before drinking (this is after giving them 2-3 weeks secondary fermentation in the ...

NT Rabbit,

Boston Cream Ale is a fantastic brew. It's good enough to convince me that its gunna be my staple brew from now on in between experimentals.

I got $100 for Xmas to buy a thermostat. What's the best unit for this around this price.

Also scored me a Muntons Old Conkerwood Black Ale kit ...

No need to rinse imo.
I use either this or the morgans sanitise (both are Hydrogen peroxide based) and never rinse. Since using this stuff, as opposed to bleach, I've made some fantastic beers with no weird flavours detected.

Cheers,
Jay.

I agree broccoli boxes are the way to go. What I do in really hot weather is put the bottles in there and fill half way with with water. Try keeping this water in the low 20s with small amounts of ice/cold water. Also you can throw a cold wet towel over the top if you dont have a lid. Only problem ...

99% of my glass bottles are twist top (roughly 150 in total) and most have been used at least three times with no problems with carbonation/leaks etc. I use the bench capper and just make sure that the lid clamps down all the way by applying a bit more force.
Should have a few more empties to play ...

Is Gary still about? Haven't noticed a post since the first one.

If you are still hanging around I'd go with the Tooheys Lager (although any lager kit would probably be OK), 0.5kg light malt extract, 0.5kg dextrose and perhaps some (say 20g) cluster hops for flavour. Up to you whether you buy some ...

Jay's Amber Lager

Heres one for the guys who go for a more complex darker shade of brew but still enjoy the cripsness of a lager.

1 can Coopers Bavarian Lager
1.5kg Liquid Amber Malt
100g English Crystal Malt
15g Willamette
Yeast As Supplied
21L

Steep the grains and hops for 10 minutes in boiled water.

I know ...
